Experience a range of private dining experiences. Shimmering pools set the stage for an intimate "Under the Stars Dining". Cabanas nestled within lush tropical gardens, or surrounded by white sands overlooking the Coral Sea, offer an idyllic ambience for a secluded gourmet picnic on the beach. Food aficionados and aspiring chefs will delight in The Chef’s Table, the resort’s signature gourmet experience.

The signature restaurant showcases the creativity of an elite culinary team which has devised its own style of haute cuisine with a strong Australian influence. Premium produce is king such as the wagyu beef selected for its marble score of 9, and even the detail with gourmet salt soaked and dried in Cabernet Sauvignon. Scroll down the wine list and the sommelier’s passionate sense of exploration is evident, with many tantalising wines from new producers.

Saturday brunch will become a One&Only Hayman Island tradition; expect anything from oysters, Bloody Marys, pizzas, king crab to caviar. This dramatic glass restaurant is perched right by the sand and food is served inside, outside and on the beach, all with energetic enthusiasm. Live music creates a relaxed sociable atmosphere; it’s a hard one to leave. In the evenings dinner begins with the Providore table offering charcuteries,tapas and seafood, continuing with an à la carte menu featuring seasonal Australian produce and seductive sea views.

Typically Italian, our resident Chef revels in the noisy enthusiasm of a family meal. He encourages sharing dishes so everyone explores the authentic flavours he has created; not just antipasti but that day’s speciality be it braised rabbit or lobster linguine. With a wood-fired oven, Amici’s menu stars pizzas. Each is hand rolled and finished with fine ingredients: porcini, truffle, blue cheese or prosciutto, everyone will find one they love.

This is technically perfect Asian cuisine from many different quarters including Thailand, Korea, India and China. The Chefs seek the freshest and most flavoursome ingredients, creating marinades and infusions with subtle skill; dashing in with some Thai basil, spearmint and other fresh herbs from the kitchen garden. This is an exotic setting nestled in a bamboo grove, with two teppanyaki tables seating 12 each, and an oriental tea house for private dining.

Family relaxation and lunch by the pool, with glittering sea views. The menu has a distinctive Spanish influence, featuring tapas and paella. Many of the special ingredients are homemade such as the matured chorizo or anchovy, potato and rosemary bread. This is also a beautiful spot for sundowners and the kids will be wild about the cool gelato bar with flavours to keep them coming back: mascarpone, pistachio, toasted almond and stracciatella.

The Chef’s Table
Once a week our Executive Chef joins 20 guests for dinner and discourse; with ingredients, preparation and inspiration explained in a convivial atmosphere. In partnership with Perrier-Jouët, our main kitchen is an exquisitely decorated space reflecting the label's delicate, yellow, white and green anemone flowers. A window allows guests to immerse in the tension and creativity of the kitchen.

On the Rocks
Crushed juices and cocktails are served daily in this calm and serene setting. Lunchtime is a chic affair for tasting fresh sea food such as ceviche and grilled lobster; gourmet burgers and light crisp salads, all served with sophistication by the shimmering pool. There are four private cabanas where guests can recline with caviar and champagne in splendid solitude, lulled by the hush of waves on the rocks below.

Bar Fifty
In the afternoon, Bar Fifty opens for tea serving savoury snacks and sweet delicacies. Exotic cocktails refresh and a menu of smooth Gascony Armagnacs and fine Cognacs make a mellow end to an evening. New are the Meduse smoking cocktails, the chic shisha pipes are elegant creations inspired by sea life.
